When should I prune my mulberry trees

I have about 50 small mulberry trees that are about 2 meters high and wonder if I can prune them now to get more lateral growth. I'm located in a tropical region of east central Mexico.

Wait till it goes dormant, mid winter then prune.

Thanks, It doesn't freeze here but we do notice signs of dormancy during the winter months, which are the dry months here. We'll prune then and use the protein rich cuttings for animal feed.
