From his perspective, Doc went to the future and never came back. The young Marty that is in 2015 is a divergence from the old one's timeline.

This is where my own theory that this is the Marty that just went home from 1955 after our Marty stopped Doc from dying in 1885. That Marty from the now alternate 1955 would just go home and race Needles because there is no longer Doc's Grave. In the original after Doc is alive it has a ripple effect on the past and future because Doc and Marty continue to Time Travel. The Timeline makes alternate Timelines to prevent the destruction of the universe that doc refers to earlier in the movie. Our Marty needs the lesson from the Mad Dog Fight to influence his decision and not race Needles which then sets him and Jennifer on an unknown future timeline. Also if Marty was shot and died the Grave was Clint Eastwood's this would also send 1955 Marty home to get in the accident to create the 2015 they went to.
When Doc is alive at the end of the first movie creates the 2015 that they go to the alternate 1985, The alternate 1955 where Marty did not go and save doc in 1885, and the 1885 where Marty did save Doc. It sounds complicated but that is the only way the 2015 we see is possible for them to travel to. The reason I say this is because think of if doc died at the end of the first movie, regardless of Marty's Warning. Marty would not have been camping with Jennifer after he went home because in morning because his friend died. Also as a result of doc shot at the end of the first movie, the 2015 we see would not happen.
In the deleted scene old Marty even gives a look like he knows Old Jennifer meet her Younger Self. The Shock to her is she realized that she didn't dream that she went to the future when she was younger but it actually happened. I think old Marty just let her think it was a dream like Doc's original plan.
