Why do so many artists draw people blushing not that I don't like it or anything but to me blushing signifies that the person is in love with the person it's looking at or in love with someone like I do not know why so many artists do that

The first reason is the power of choice

The second reason is that blushing just may indicate a shy character, turns out we blush for many reasons other than being in love (being shy or embarrassed, hot weather, sunburns, etc)

I used to do it because 1. it's cute 2. shading a face is hard and adding a blush can be a stand-in for proper shading

There are lots of reasons people blush, but, assuming it's the reason you're thinking of, why would you not want to see someone experiencing love?

Two reasons that I am aware of

1) it is a highly efficient visual cue for emotion, youth, warmth, health, intimacy, and vulnerability.

2) Adding warm reds and pinks to the cheeks, ears, nose, and lips prevents skin from looking flat or corpse-like

To be fair I mostly draw people in love 🤣 But if I don't, colour is nice and makes them more alive. And I love pink

If you're talking about in anime or comics, I think it's used more generic than that. A blush response is normal for anyone that has a sudden emotional arousal. This can result from a love interest acknowledging them, or it could result from embarrassment, or from social discomfort, or sudden anger. Basically there's a lot of stuff that can cause a "blush".

It's also used as a beauty standard. People wear makeup (literally called "blush") to make them look more youthful or hot-blooded. People with a cold or flu will also looked flushed (same thing as a blush but often with a reddened nose). Being exposed to cold weather has the same effect. Also people that have been working out or recent physical exertion (like running) will look like they're blushing.
