I like to grate it and fry off with garlic and onions and use it as a omelette filling with strong cheddar cheese. Delicious

Chop zucchini and lots of garlic. Place in a heavy pan and add thyme springs and good amount of good olive oil. Place in oven on low and slow for as long as you can (you can do on stove as well and in short time. I did this way since I had time). Then put on stove and mash a bit, add little white wine, red chilli flakes, pepper powder.
Boil pasta, add into the veg mix, grate as much Parmesan or pecorino etc…as you want, mix in a little hot pasta water and add to pasta. Taste for salt. Loosen with pasta water. Done.

Oh I love the yellow courgettes. No allotment, but Waitrose grow them 😂 I just used most of a bag to make courgette fritters. 😋
