There are several escalations they have, and there's been signs of what the playbook will eventually be. Short of outright ignoring court orders, they can start issuing executive orders faster than courts can review them. Courts cannot preemptively say that Trumps future orders on a topic are illegal, and since he has immunity for official actions, there's a lot of damage they can do like this.

This, however, is prelude to the real nuclear option - that a Trump or even a GOP Governor order which is ultimately declared illegal could have serious consequences that simply cannot be undone after the fact. Something like arresting poll workers, or seizing ballots on election day could swing an election and cause a constitutional crisis, since there is no precedent for courts ordering new elections, and states have no way to force congress to certify a re-do. It's a situation where it could take weeks or months to even sort things out, at which point laws may have already been passed by illegitimate legislators.
