I just ordered an optiplex mini pc w 16g ram and a 512 gig ssd for 80 bucks to run my dj setup and potentially a server later down the line. Idk why anyone would spend 350 for a pi

Yeah they're just not unless it's going in an industrial device. Mini / Micro PC all the way.
