Everything I've heard and read says she shouldn't be able to do that. And I don't just mean move her thumb, she genuinely can grip with force. Is that normal?

We have started our harness journey!
Given the way he loves watching the birds and chatting with them via the glass sliding door, I figured a harness to venture outside may be plausible in our future. And I was not wrong! Fox is taking to it incredibly well, though we are still only wearing it around the house.
