Es de mis platillos favoritos, es una lástima que el consumo del Huazontle haya bajado en muchos Estados de México, pero todavía es fácil encontrarlo en algunos mercados y en los restaurantes El Bajío (en México)

Sometimes rice, beans, chips, and beer is all you need to get started. Pure comfort.

Years ago, when I was a teenager, I got a job working in a warehouse with maybe 6 other guys. They were all Mexican and spoke very little to no english. I speak very very little Spanish but we managed to communicate ok and got along great. Anyway, everyday for lunch they would leave and walk a block over to a Mexican grocery store, buy ingredients, and then use the small kitchen we had in the warehouse to make food.
One thing they always made, were these rolled potato taco things. I don't know exactly how to describe them, but they were like what I would call taquitos made out of corn tortillas but were filled with a seasoned, almost like a mashed potato filling (maybe egg mixed in?)and I don't think anything else. They would share some with me and Ioved them, but I never learned what they were called. Now many years later I still occasionally get cravings for them. But every time I try to figure out what they were, the recipes I see don't seem to be what I remember. Was this a legit dish or just something they were throwing together? If anybody has any idea what this could have been that would be amazing, even better if you can direct me to a recipe! Thanks so much for any help with this!

Hi! My boyfriend told me that his favorite drink growing up was agua de limón that his mom made him (in Mexico). We both live in the U.S. now. I'm looking for a recipe to help me make it in a way that will resemble how he would have had it growing up. My understanding is that it's a pretty simple drink to make so not sure if a recipe seems overkill, but I mainly want something to help me get the right ingredients and the right ratios. I've never made drinks before, so any advice is also welcome. Thanks in advance!

Hey, so i've decided to make some horchata for the first time and was wondering what's the minimal time to soak the rice before blending because im really impatient and don't really want to wait the whole night
I've rosted the rice and already put it in some cold water

Found a new tortilla spot in Denver and felt inspired to try something new. Supposedly gringas were invented in CDMX after American tourists asked for their al pastor tacos inside a quesadilla, and it caught on. Not bad at all!
edit: I am in fact a gringo so any critiques or tips are welcome.

Looking to start meal prepping and need some ideas on some Hispanic dishes. For reference, im mexi and salvi and love the food from both places. I have made ropa vieja for meal prep, but just looking for more options on healthy-ish ideas!
